Irish Coffee

Hot coffee, Irish whiskey and sugar under a float of cold cream — the definitive warmer.


Ingredients

  • 50 ml irish whiskey
  • 120 ml coffee
  • 1 tsp simple syrup
  • 50 ml heavy cream

Method

  1. 1Pour hot coffee into a warmed glass and stir in the whiskey and sugar until dissolved.
  2. 2Lightly whip the cream so it just thickens.
  3. 3Float the cream over the back of a spoon so it sits on top.

PRO TIP

Warm the glass first and pour the cream gently — it should float, not sink.

Ramos Gin Fizz

Gin, citrus, cream and orange-flower whipped to a towering cloud — the famous two-minute shake.


Ingredients

  • 45 ml gin
  • 15 ml lemon juice
  • 15 ml lime juice
  • 30 ml simple syrup
  • 60 ml heavy cream
  • 1 egg white
  • 3 dashes orange flower water
  • 2 drops vanilla extract
  • to top club soda

Method

  1. 1Shake everything except the soda with ice for a full two minutes.
  2. 2Double-strain, return to the shaker, and hard-shake again without ice.
  3. 3Strain into a highball and top slowly with soda to lift the foam.

PRO TIP

The long shake is the whole point — it builds the signature standing foam.

Brandy Alexander

Cognac, crème de cacao and cream — a velvety, chocolate-laced nightcap.


Ingredients

  • 30 ml cognac
  • 30 ml creme de cacao
  • 30 ml heavy cream

Method

  1. 1Shake all ingredients hard with ice.
  2. 2Double-strain into a chilled coupe.

PRO TIP

Grate fresh nutmeg over the top just before serving.

Garnish — Grated nutmeg


Grasshopper

Equal parts crème de menthe, crème de cacao and cream — minty, chocolatey and pale green.


Ingredients

  • 20 ml creme de cacao
  • 20 ml creme de menthe
  • 20 ml heavy cream

Method

  1. 1Shake all ingredients briskly with ice.
  2. 2Strain into a chilled coupe.

PRO TIP

Green crème de menthe gives it the signature colour.

Garnish — Mint leaf


White Russian

Vodka and coffee liqueur under a cloud of cream — dessert in a rocks glass.


Ingredients

  • 50 ml vodka
  • 20 ml kahlua
  • 30 ml heavy cream

Method

  1. 1Build vodka and Kahlúa over ice in a rocks glass.
  2. 2Float the cream on top.
  3. 3Stir gently before drinking if you like.

PRO TIP

Lightly whip the cream so it sits as a layer instead of sinking.
