Irish Coffee
Hot coffee, Irish whiskey and sugar under a float of cold cream — the definitive warmer.
Ingredients
- ◆50 ml irish whiskey
- ◆120 ml coffee
- ◆1 tsp simple syrup
- ◆50 ml heavy cream
Method
- 1Pour hot coffee into a warmed glass and stir in the whiskey and sugar until dissolved.
- 2Lightly whip the cream so it just thickens.
- 3Float the cream over the back of a spoon so it sits on top.
PRO TIP
Warm the glass first and pour the cream gently — it should float, not sink.

Tipperary
Irish whiskey, sweet vermouth and green Chartreuse, stirred — herbal, lush and underrated.
Ingredients
- ◆50 ml irish whiskey
- ◆25 ml sweet vermouth
- ◆15 ml green chartreuse
- ◆2 dashes angostura bitters
Method
- 1Stir all ingredients with ice until cold.
- 2Strain into a chilled martini glass.
PRO TIP
Green Chartreuse turns an Irish Manhattan into something far more interesting.
