7 classic recipes from our canon that use campari — Campari sits in our liqueurs & fortified shelf.

Negroni

✦ Proven classicEasyRocks

Equal parts bitter, botanical and sweet — a ruby aperitivo with a spine.

Ingredients

  • 30 ml gin
  • 30 ml campari
  • 30 ml sweet vermouth

Method

  1. 1Add all ingredients to a mixing glass with ice.
  2. 2Stir until well chilled, about 20 seconds.
  3. 3Strain over a large cube in a rocks glass.

PRO TIP

Express the orange peel over the surface to release the oils before dropping it in.

Garnish — Orange peel

Boulevardier

✦ Proven classicEasyRocks

Bourbon, Campari and sweet vermouth — the Negroni's richer, whiskey-drinking sibling.

Ingredients

  • 45 ml bourbon
  • 30 ml campari
  • 30 ml sweet vermouth

Method

  1. 1Stir all ingredients with ice until cold.
  2. 2Strain over a large cube in a rocks glass.

PRO TIP

A little extra whiskey over the Negroni's gin keeps it from going sweet.

Garnish — Orange peel

Americano

✦ Proven classicEasyHighball

Campari and sweet vermouth lengthened with soda — the bittersweet ancestor of the Negroni.

Ingredients

  • 30 ml campari
  • 30 ml sweet vermouth
  • to top club soda

Method

  1. 1Build Campari and vermouth over ice in a highball.
  2. 2Top with club soda and stir once.

PRO TIP

Swap the soda for gin and you've made a Negroni.

Garnish — Orange slice

Jungle Bird

✦ Proven classicMediumRocks

Dark rum and Campari over pineapple and lime — bitter, tropical and unexpectedly sophisticated.

Ingredients

  • 45 ml dark rum
  • 22 ml campari
  • 45 ml pineapple juice
  • 15 ml lime juice
  • 15 ml demerara syrup

Method

  1. 1Shake all ingredients with ice.
  2. 2Strain over fresh ice in a rocks glass.

PRO TIP

The Campari is what makes it — bitter against the sweet pineapple.

Garnish — Pineapple wedge

Garibaldi

✦ Proven classicEasyHighball

Campari lengthened with fluffy fresh orange juice — bittersweet and breakfast-bright.

Ingredients

  • 45 ml campari
  • 120 ml orange juice

Method

  1. 1Build over ice in a highball.
  2. 2Use vigorously aerated ('fluffy') fresh orange juice.

PRO TIP

Aerate the juice so it foams — that texture is the whole trick.

Garnish — Orange wedge

Cardinale

✦ Proven classicEasyCoupe

A drier Negroni — gin and Campari leaning on dry vermouth instead of sweet.

Ingredients

  • 40 ml gin
  • 20 ml dry vermouth
  • 10 ml campari

Method

  1. 1Stir all ingredients with ice until cold.
  2. 2Strain into a chilled cocktail glass.

PRO TIP

Dry vermouth makes it crisper and more bitter than a classic Negroni.

Garnish — Lemon zest

Negroni Sbagliato

✦ Proven classicEasyRocks

A Negroni 'mistaken' with sparkling wine instead of gin — lighter, fizzier, just as ruby.

Ingredients

  • 30 ml campari
  • 30 ml sweet vermouth
  • 60 ml prosecco

Method

  1. 1Build Campari and vermouth over ice.
  2. 2Top with prosecco and stir gently.

PRO TIP

'Sbagliato' means 'mistaken' — prosecco poured in place of gin.

Garnish — Orange slice
